Sample Recipe from The Lazy Cook's Favorite Foods
Main meal - Puffed Up Chicken with a Tapenade Sauce
to serve 4
4 skinless chicken breasts
1 sheet of ready rolled puff pastry - defrosted
1 jar of Tapenade (green olive paste)

Set oven at gas 7/220°c/200°fan/AGA roasting oven
Lightly oil a baking tray or tin. Cut the sheet of pastry into
4 and spread a teaspoon of tapenade paste down the centre of each.
Top with a chicken breast and enclose it in the pastry (like a sausage
roll). Put on to the prepared tray (loose pastry ends down), prick
across the top with a fork then bake in the pre-set oven for 10-15mins.
or until the pastry has risen and browned slightly. Serve immediately
with a Tapenade Sauce made as follows –
Put 50ml (2fl oz) white wine and 50ml (2fl oz) vegetable or chicken
stock into a pan and boil to reduce by half. Stir in 2 teaspoons
Tapenade paste and 2 teaspoons double cream.

Lazy
Cook tips -a very quick recipe to prepare and cook and perfect
when entertaining. The pastry keeps the chicken breasts really moist.
Children will enjoy these but you might replace the tapenade paste with
tomato sauce. I recommend a packet of frozen ready-rolled puff pastry
is kept in your freezer – an excellent standby. Tapenade paste is available
in jars from most delicatessen or supermarkets. Single cream can be used
in place of double.
