Sample Recipe from The Lazy Cook's Favorite Foods

Village Pie - to serve 6

1 large onion - skin and chop
450g (1 lb) minced beef
225g (8oz) chicken livers
1 x 400g tin chopped tomatoes
pinch of sugar
2fl.oz red or white wine, or stock
freshly ground black pepper
mixed herbs - fresh or dried

topping -
750g pkt frozen oven chips

Set oven at gas 6/200c/180fan/Aga roasting oven, high runner.

Cover the base of a sauté or large shallow pan with water and bring to boil. Add the chopped onion, put lid on pan and cook for 1-2mins. or until the onion softens. adding a little more hot water if necessary to prevent sticking. Add the minced beef breaking it down with a fork and cook over a gentle heat for 5-10mins. stirring from time to time. Stir in the remaining ingredients (except the oven chips), and simmer, with lid on pan, for 5-10mins. or until the contents have blended together.

Put into a large shallow ovenproof dish and top with oven chips. Put into the pre-set oven for 20-30mins. or until the chips have browned a little and the ingredients are hot and bubbling. Serve with frozen peas and fresh carrots, or vegetables of your choice.
