From as far back as I can remember I have been fascinated by cooking. At school it was the only lesson I enjoyed and one in which I succeeded where the remainder of the class struggled. This new-found skill filled me with enthusiasm and ambition – the ambition to be a cookery demonstrator. However, on leaving school at fifteen I was sent to a secretarial college and it was many years later that this childhood ambition came to life. It happened shortly after we moved to the Cotswolds.

Our youngest child had started school when one day I read a piece in a national newspaper about a lady who was offering cookery demonstrations in her kitchen. I was reminded of my early desire to demonstrate cooking and with the children at school there was no reason for me to delay. I soon set about planning and it was not long before I was filling my kitchen with ladies eager to learn about my kind of cooking.

The success of these demonstrations created other opportunities for me and writing, broadcasting and public speaking were soon added to my curriculum. Over the years I have also followed many other interests all of which have kept me out of the kitchen. However, recipe development has continued to play an important part in my life and providing tasty meals, attractively presented is the only way I know how to cook - but with time against me I had to have a re-think.

I began by taking a new look at the present day ingredients available to me both in my store cupboard and on the supermarket shelves. Putting all my experience to the test, taking short cuts and speeding up on preparation and assembly, I built up a completely new collection of recipes - still tasty to eat and good to look at but very quick to prepare …. and so I became a "Lazy Cook".

Ever since I began creating my own recipes I have rarely ceased to be amazed by the number of different ways a handful of everyday ingredients can be prepared and presented offering a variety of colours, textures and flavours. As a new project I put a small collection of recipes in my first book – 'Enter the new Millennium with Lazy Cook Mo Smith' (now reprinted under the title "A Lazy Cook's Christmas"). The success of this publication and the enthusiastic feedback I received has encouraged me to offer more 'Lazy Cook' recipes in subsequent books.
